Felipe Alvarez: A native of Spain, Felipe Alvarez started his career by developing
business for a wine exports company, called Vineland in Madrid,
where he acquired vast experiences in the wine businesson several continents.
Chef Dudley Nieto: Nieto, one of Chicago's premier Spanish chefs, currently heads the kitchen at Eivissa: Pintxos, Tapas and Sangria Restaurant in Old Town.

FIRST COURSE:
Pinxto de Ensaladilla de Mar - Savory Seafood Salad ( Morrocan octopus, Sea scallops,
and shrimp) marinated in a 50 year old sherry wine vinegar and cumin Aioli.
Served in a bread crustee
SECOND COURSE:
Lomito de Puerco Andaluz - Grilled pork tenderloin with a Pedro Ximenez oloroso reduction, caramalized onions and potatoes in phylo dough
THIRD COURSE:
Paella Catalana - A combination of Shrimp, lobster, octopus, chicken, pork
(spanish chorizo, butiffarra) made with the famous Picada catalana with almonds, parsley,
olive oil and saffron
FOURTH COURSE:
Napoleon de Chocolate con espuma de Maracuya - Chocolate Napoleon with Maracuya
foam and tomato chutney
